We first ate lettuce wraps at the home of our friends Brian and Erin, and it was a threshold experience: we’d finally found a “we can grow the ingredients” replacement for tacos. This recipe isn’t actually Brian and Erin’s, it’s ours, but we’ve named it in their honour.
- Cook hamburger meat in a bit of oil (Erin uses both ground pork and beef hamburger)
- Add & cook chopped onion, crushed garlic and chilli pepper seeds to taste
- Prepare and add vegetables as available, either to the cooked mixture or as “taco-style” add-ons: carrots, apples, celery, tomatoes, zucchini/patty pans, kohlrabi, green onions
- Wash and spin-dry lettuce leaves, preferably a leafy variety that’s pliable (vs. Romaine)
- Make wraps: spoon meat mixture onto a leaf, add sauces as desired (hoisin sauce, soy sauce, hot sauce, salsa, etc.), fold like a burrito and eat
