We usually just eat our green beans raw as a snack or cut up into a salad, or saute them for 10 minutes or so in butter and crushed garlic.
For fancier recipes, here are some good ideas we’ve found:
Val’s Marinated Green (and/or Dragon Tongue) Beans
- Mix your favourite vinaigrette and pour into a bowl
- Steam fresh beans briefly: they should still be crisp
- Drain beans (if necessary) and stir into the vinaigrette
- Let beans sit in marinade for 1 hour or overnight (beans may lose their bright colour if marinated overnight)
- Get fancy: wrap in proscuitto, stir in nuts … or simply enjoy as-is
Japanese-style Green Beans
- Warm a large skillet or wok over medium heat.
- When the skillet is hot, pour in 1 tbsp canola oil and 1 1/2 tsp sesame oil, then place whole green beans into the skillet.
- Stir the beans to coat with oil.
- Cook until the beans are bright green and slightly browned in spots, about 10 minutes.
- Remove from heat, and stir in 1 tbsp soy sauce.
- Cover, and let sit about 5 minutes.
- Transfer to a serving platter and sprinkle with 1 tbsp toasted sesame seeds, nuts, or whatever floats your boat.
Bacon-wrapped Green Beans
(adapted from Kitty’s Kozy Kitchen)
-
Steam, boil or saute green beans for 5 minutes.
- Cool beans, then wrap 6-10 beans into a bundle with a strip of uncooked bacon.
- Pace bundles in a baking dish and sprinkle with any seasonings you like: salt, pepper, chilli powder, garlic salt, etc.
- Pour melted butter over the bundles and sprinkle brown sugar (optional).
- Bake at 350 degrees for 15-20 minutes, or until the bacon is cooked to your liking.
