This recipe is from Clemens and Sheila, two wonderful local businesspeople and passionate foodies who have been very supportive of our farm.
Heat olive oil in a pan.
Add 1/2 sweet onion, sliced or chopped. Cook until translucent.
Add:
- Handful of sliced mushrooms
- 2 handfuls trimmed green beans
- Salt
- Black pepper
- 1/4 cup white wine
Cook until beans are almost tender.
Add:
- Pinch red pepper flakes
- 1 bunch kale (6 leaves), chopped or torn
Cool until kale has wilted.
Add:
- 1/2 lemon’s juice
- Small handful grated parmesan
Toss to coat and serve immediately.
