Big, beautiful lettuce leaves are a perfect replacement for taco shells or tortillas, especially if you’re striving to eat more vegetables (and less corn or wheat). Once prepared, all your ingredients can be kept in the fridge and brought out as needed for quick snacks or meals.
- Cook any kind of ground meat well in a bit of oil, or prepare beans, lentils, rice or quinoa as a vegetarian alternative.
- Sauté chopped onion, crushed garlic cloves and chili pepper seeds to taste.
- Prepare and add vegetables as available, either to the cooked mixture or as “taco-style” add-ons: zucchini, kohlrabi, chard stems, fennel, beets, carrots, apples, green onions, celery, tomatoes, etc.
- Wash and dry large lettuce leaves, preferably a leafy variety that’s pliable (rather than romaine).
- Bring everything to the table and make wraps until you’re full: spoon the fillings onto a leaf, add sauces as desired (hoisin sauce, soy sauce, hot sauce, salsa, etc.), fold like a burrito and eat messily.
