A good salsa recipe can be hard to find, so here’s ours. We’ve eaten entire jars in a single sitting.
Combine in a very large pot:
- 3 cups chopped onions
- 3/4 cup chopped sweet peppers
- 6 chopped hot peppers
- 1 clove crushed garlic
- 5 cups chopped tomatoes
- 1 can tomato paste
- 1/2 cup vinegar (no more than 5% acidic)
- 1 tbsp sugar
- 2 tbsp lime juice
- 1 1/2 tsp salt
- 1 tsp oregano
- 1 bunch chopped cilantro
Simmer 1 hour, then can. (See www.bernardin.ca for canning instructions so as to avoid botulism.)
